As we’ve said before, African coffees are generally my favorite, no matter the region. This burundi is a nice example of a clean, sweet and tart African coffee. We played with a few roast profiles and found that this coffee is very extreme to each end of the spectrum, which can be a blessing in disguise sometimes. Too much mild or wild at each end helps you find a middle ground and that’s exactly where we are with this coffee. A nice balance of sweetness like cane juice but still a kick to the side of the tongue with a tart apple. Can’t have sour without having sweet!
